Panade*
(from the Zuni Cafe cookbook)

Mixed Green Salad w/ Cherry Tomato and Apple in a Potato Gaufrette basket
(w/ fig vinaigrette)

*a savory chard, onion and bread "pudding" -- slow cooked in a cassarole for 3.5 hours at 275. It just melts in your mouth.)
