* it was supposed to be a toor dal but I was out of toor and used regular brown lentils instead.

** this calls for champagne or yellow beets, but we substituted red beets -- you lose a little in the subtlety of color, but the taste was identical.

*** pappadams -- or papadums, poppadams and my new favorite variation puppadoms ;)
