Parsnip Noodles with Cilantro Walnut Pesto
A second luncheon helping of the wonderful parsnip noodles from Matthew Kenney's "Everyday Raw Express."
We used our "spiral cutter gadget thingy" (a.k.a. "Cook Help") for turning the parsnips into noodles, here it is from 2006 when we were turning potatoes to be wrapped around tofu.
It's not an easy task given that parsnips can be a little fibrous, but with a little extra elbow grease they turned out nice and long...
