Mushroom Tofu Stroganoff



The stroganoff was delightfully creamy (thanks to the cashew base) with the mushrooms and tofu holding up their part of the bargain.

Cashew sales will skyrocket after this cookbook comes out. ;)

This is a test recipe for Isa's upcoming cookbook, so you know the drill -- we can't give out the recipe.
