Eggplant Parmesan*
(over fusilli pasta)

Wilted Russian Kale
(w/ onions, garlic, raisins and pine nuts)

Homemade White Bread**

*Made my own tomato sauce for the eggplant tonight -- because in Ohio, there are four things you will see on menus for the next month -- corn, tomatoes, zucchini and eggplant.

**broke out the bread machine again ;)
