Dinner 2/5

Roasted Vegetable Lasagna
(eggplant, red bell pepper, onion, zucchini, tofu ricotta*, tomato sauce, lasagna noodles)

* one block of firm tofu, parsley, salt, pepper, and soy sour cream, soy parmesan and hit w/ blender stick so it's smooth, but with slight bit of texture
