Braised Cardoons (Cardone)*

Panade **
(bread, onions, garlic, kale, daikon greens, soy cheese, veg stock -- from "Zuni Cafe" cookbook)

* they look like overgrown celery, but taste a bit like artichokes
** slow cooking -- baked at 250 for 4 hours
