(oyster and shiitake mushrooms, soy cheese*, red pepper wraps)
Arugula Salad
(w/ creamy tequila dressing)
* we've been using the "Follow Your Heart" Vegan Gourmet Monterey Jack lately, and it's easily the best casein-free soy cheese I've had -- the raw texture is not too weird, the flavor is decent and more importantly, it melts ;)
