Spinach and Mushroom Phyllo Roll w/ Dilled Balsamic Vinegar

* used some Entoloma mushrooms, which I've never had before -- also called scallop mushrooms, which I guess they resemble when fried (never had scallops so, *shrug*). very tasty and nice texture, very dense.
