* originally the sweet part was supposed to be Honey (mixed with Lemon), I ended up using Rice Syrup mixed with Brown Sugar and Lemon, then baking the Seitan on a rack set over a sheet pan lined with aluminum foil to catch the drips... the salad kicked ass too ;)
