(Rick Bayless classic)
Empanadas
(filled with Potato and Soyrizo filling)
Fajaitas
(Red and Yellow Bell Peppers, marinated Seitan Strips, soy cheese)
*yep, repeat of last night with the empanadas -- we were trying them out for a possible wine tasting menu item, and they turned out really nicely. They also stay warm inside for a good 10 minutes which is important ;)
