Veggie Shish Kebab
(mushroom, red bell pepper, shallot, yellow squash, cherry tomato)
(grilled seitan with coconut milk/peanut sauce)
The kids wanted kebab tonight, and who are we to refuse a request like that? ;)
We decided to make the satay because seitan cooks at a different rate than the veggies, so it was easier to just make separate skewers and a quick sauce of coconut milk, peanut butter, cherry bomb peppers and tamari.
