Lunch
Seitan, Tomato and Spring Onion Ragu over Rigatoni Pasta *
Cauliflower in a Roasted Almond, Sesame and Coconut Sauce

Lunch
Wiblets *
Water
*Another Rule 5 entry (vegan convenience food shaped like a meat product). Basically, it's barbecued seitan shaped like ribs. The sauce was appropriately salty and smoky, and I had them on a bun, so I cut it to fit, so they didn't look like ribs afterwards. Not bad, but I can make it better...

Miso soup with Snow Peas
Mixed Sushi Platter
Asian Noodles and Tofu in Peanut Sauce*

Vegan Chocolate Raspberry Torte
* Went to the Mustard Seed for lunch while out looking for light fixtures for our new library (oh, but that's a whole 'nother blog in waiting). We used to go there more often before we had kids, but it's been a few years since we've been for lunch. The sushi and noodles were fine, but the soup tasted like it had been sitting around since yesterday. The snow peas had turned completely brown from the amount of miso stock that it had absorbed.

Dinner
Pierogi's*
(Cabbage and Onion)
Apple Sauce
French Bread
Dessert
Coffee
Chocolate Cake
*We made the Pierogi's back in September and vacuum sealed and froze them for nights like tonight (where Liz gets home late for dinner). The Apple Sauce was from August, when we got 3 boxes of apples from a friend. After peeling and coring them, they were boiled down with just a hint of cinnamon. Both tasted like we had made them yesterday...

Dinner
Twice Baked Potatoes
Braised Asparagus
Tofu Oatloaf*
* My first real attempt at a meatless loaf. A mixture of ground tofu, caramelized onions, carrots, celery, soy sauce, ketchup, mustard, garlic and oatmeal. The oatmeal acts as the binder, holding the whole thing together, and amazingly enough, it did.

Fried Potato Skins
Dinner
Colcannon
Cock Of The North*
Lobster Mushrooms
Soda Bread
(w/ Caraway Seed)
*Colorful name for an Irish style stew tradionally made with a capon (a castrated male chicken, usually killed at about 10 months) instead made with Seitan. The highlight in preparation was after the whisky was added and then flambed. A true Iron Chef like moment...The kids wanted me to do it again.
