Parsnip Noodles with Cilantro Walnut Pesto

We broke out the "spiral cutter gadget thingy" again and cranked out some spiralized parsnip noodles (recipe from Matthew Kenney's "Everyday Raw Express") which were exceptionally creamy this time around.
