I also made a slight modification with the tofu by adding fresh porcini mushrooms (ahhhh) on top of the tofu cutlet, and then rolling the whole thing in phyllo dough. It handled the gravy just fine and didn't get soggy at the table. Next thing to tackle -- the cranberries and the brussel sprouts and chestnut side dish...
As for the soup... we just saw that segment again on Food Network where Bocuse himself makes the soup so Liz made some puff pastry for the top of the soup

(lasgna w/ pureed cannellini bean, onion, garlic, orange bell pepper and soy parmasean cheese rolled up jelly roll style, cut in half, coated w/ olive oil and baked in the oven for 15 minutes at 375. The leeks were roased in the oven, then I added fennel stock I had make over the weekend and that was used as the base)

Yet Another Update
OK, vacation's over, finished moving furniture, painting and putting boxes and boxes of books into the library. Still a bunch more work to do (magazines and moving paintings) but all in all, a productive "vacation"...
In bloggy matters, I'm dropping the breakfast thing as most of you know it's some kind of combination of bread, Soy Boy Breakfast Links and hot sauce with club soda. I get bored typing it, and you get bored reading it ;) Same with lunch, as it's mostly leftovers from the night before...
So for now, it'll be just dinner and we'll see how that works out...

Having said that, they stuck to the Tofu nicely and sauteed up beautifully -- the Spicy Mango Salsa was the kicker, really elevating it from a typical dredged Tofu dish.

Seitan Rolls*
(stuffed with Mushrooms, Green and Black Olives, Sage, Thyme and Maderia)
Braised Fennel w/ Pine Nuts
* We made our own Seitan today with the packaged Wheat Gluten, rather than from Bread Flour, which eliminated the constatnt soaking in cold water, but made for a different texture to the finished product. We made 1/4" sheets about 4" x 7" then rolled them like a jelly-roll, tied them in string, seared the outside pretty well, and then baked in a 350° oven for 30 minutes (it probably could have been 45, but we were hungry at that point). The outside was done perfectly, but the inside could have used the extra 15 minutes.
The texture, as I mentioned, was different. It wasn't chewy like the commercial seitan, but with a rather delicate mouth-feel. It fried up beautifully, handled well and didn't break when handled, but definately a more "bready" flavor.
We're going to try it again next weekend with the traditional method to see how it works out...

One of the perks of my job as webmaster for the cooking school is that I get to meet some interesting folks that I might not normally, holed-up here in my little webmaster bunker, errr office. Case in point, last night I got meet and hang out a little with Alton Brown as he dutifully signed a giant merchandise pile of his signature salt-cellars. The school apparently got some of the last originals in the warehouse, and he signed most of them under the lid in record time ("So, when do these show up on eBay again?" I joked). He also signed copies of his new book "I'm Just Here For The Food" Alton said, "I don't like the dust jacket much, but the hardcover looks good, more like a textbook"
His publishers (Stewart Tabori & Chang) set up a little book tour between the shooting his show "Good Eats". Alton says they shoot three times a year and that they just finished season 6.1 and will start on 6.2 when he gets back.
He graciously signed all the books and salt-cellars proffered to him and took pictures with the class after his demonstration on how to make souffles.
And little known fact about Alton -- he's a blogger too.

Also comes in square and triangle shape, but the basic set doesn't come with the pyramid shape, which really bummed me out... The lentils go between each layer which helps hold the whole thing together, starting with the grilled red onion base (leftover from the portobello sandwiches at lunch yesterday), then red pepper (also from yesterday's lunch) then the spinach/chard combo on top. Almost hated to cut into it, but it held together pretty well until the end...

And we never go wrong with braising the leeks, always sweet and tender.

Dinner
Stir Fry*
(carrots, shiitake mushrooms, scallions, tofu, pistachio nuts)
Stir Fried Basmati Rice
(w/ toasted sesame oil)
Braised Brussel Sprouts
(in soy sauce and spices)
White Eggplant
(with sake, white miso, sesame seeds, sea salt, onion and garlic)
*Our first dinner out on the deck this year. The white eggplant was a last minute surprise, and turned out extremely well, a bit of an Iron Chef moment...

Dinner
Moussaka*
Saganaki
(a.k.a. flamin' cheese)
* We made the Moussaka in an 6-inch springform pan (by Martha of course) in a method as seen on "Secrets Of The CIA" cooking show on PBS from a few years ago -- thin eggplant slices are cut on a mandolin or Benriner, and arranged so they overhang and overlap around the edges of the pan and are then stuffed with a rice, tomato, thyme, oregano, coriander, cinnamon mixture combined with a bechamel sauce. Then baked at 375 for about 45 minutes, cooled for 15, inverted, cut into cake shaped wedges and served.
The Saganaki is simply floured soy cheese pieces deep-fried for a minute or so, doused with some hot ouzo, and then flambéd...

Sauteed Baby Artichokes and Portobello Mushrooms
Ciabatta Bread
*Liz went to the grocery store this afternoon (Kriegers, a small local market with great produce) where even the produce staff asked her what she was going to do with these. Thanks to Jim Peterson's great "Vegetable" book, we at least had a plan. We first cleaned them off and trimmed them slightly and then sauteed the ferns in a little oil, garlic and parsley. They had an asparagus-like texture with a slight bitter component. A definite foodie moment ;)

*Another Rule 5 entry (vegan convenience food shaped like a meat product). Basically, it's barbecued seitan shaped like ribs. The sauce was appropriately salty and smoky, and I had them on a bun, so I cut it to fit, so they didn't look like ribs afterwards. Not bad, but I can make it better...
