Spicy Eggplant in Tamarind Sauce

Keralan Beets and Coconut

Tofu [Chicken] Tomato

Spicy Pineapple and Coconut

Basmati Rice

* the irony here is that for years I couldn't stand coconut -- but the dried unsweetened coconut is a whole 'nother ball game -- slightly toasted with cumin, corriander, turmneric and cayenne it really made the eggplant dish rock... Same with the pineapple dish, it added another layer of complexity.
