Grilled Eggplant Ravioli with Shiitake Mushrooms

Five-Spice Seitan with Steamed Daikon
(seitan, five spice powder, szechuan peppercorns, tamari)



The ravioli were adapted from Jean-Georges Vongerichten. We subbed shiitake mushrooms for the bacon called for in the recipe. And just sealed the wonton wrappers with a light cornstarch slurry. Kicked all kinds of ass, and took all kinds of names...

The five-spice seitan is served in a hollowed out, steamed piece of daikon with cilantro garnish. I'm still playing with this idea, trying figure out ways to add another level of flavor to the daikon. But I like the form, and the seitan works well here.
