Tofu Marsala over Fettuccine

Hickory Smoked Grilled Eggplant



We broke out the smoker box for the tofu and eggplant (hickory wood, about 20 minutes) and then made the Tofu Marsala as usual (recipe). Although much to the kids consternation, we've (temporarily) run out of funny shaped pasta and had to go with with plain ol' fettuccine. ;)
